Watermelon Cucumber Salad
/Refreshing, light, and colourful, this salad is quick-to-prepare. Choose optional add-ins like goat cheese, chives or basil to add your own late-summer flare. Serves 4.
Ingredients
4 cups watermelon, cubed
2 cups cucumber, sliced extra thinly
1/2 cup red onion, minced
4 cups baby arugula, divided
EVOO and balsamic vinegar reduction, to taste
Directions
Gently toss the first three ingredients and spoon over plates of baby arugula. Drizzle lightly with EVOO and balsamic vinegar reduction.
