Cranberry Chutney

This delightful chutney goes with nut loaves, tofurkey, veggie burgers and so much more. Try it for yourself – your taste buds will thank you for it.

Ingredients

2 c fresh cranberries
1/2 c raisins
1/4 packed brown sugar
1 tsp ground cinnamon
1/2 tsp minced fresh ginger root
1/8 tsp ground cloves
1/2 c water
1/4 c minced onion
1/4 c chopped apple
1/4 c celery, chopped finely

Directions

Combine all but the last three ingredients in a saucepan. Bring to boil, simmer over low heat until berries start to pop (~ 5 min.) Add onion, apple, and celery; continue to cook, stirring occasionally, until mixture starts to thicken (~5-10 min). Transfer to a container and cool slightly. Refrigerate overnight to allow the flavours to mix.
