Summer Squash Croquettes

Anyone who grows squash knows that you usually end up with surplus. These yummy bites make for an incredibly good quick snack.  Turn them into a light, healthy lunch by teaming these little gems with a summer crisp salad.

Ingredients

2 cups yellow squash, finely chopped
1 cup onion, finely chopped
1 egg, beaten
1 teaspoon salt
1 teaspoon pepper
½ cup plus 1 tbsp all-purpose flour
Vegetable oil

Directions

In a large bowl, combine squash, onion, egg, salt, and pepper. Mix well. Stir in flour.  Heat ½-inch oil in a skillet over med-high heat.  Drop batter by tablespoonfuls into oil.  Cook ~3 min each side, turning once, until golden brown.  Drain croquettes on paper towels and enjoy.
