Not Your Momma’s Potatoes
/These are Not Your Momma’s Potatoes. In fact, they are not potatoes at all! They are RADISHES. Keto-friendly, gluten-free and vegetarian, this side dish is as close to potatoes as you can get. The trick is to let them roast a looooooonnnnng time.
Ingredients
- 2 bunches small to medium radishes, trimmed and halved
- 2 tbsp EVOO
- 2 tsp thyme, fresh or dried (optional)
- Sea salt flakes to taste
- Black pepper freshly ground to taste
- ¼ c Parmesan cheese, grated
Directions
1. Preheat oven to 400°F.
2. Add radishes to a prepared baking dish, drizzle with olive oil and seasonings. Roast 45-60 min until crisp and golden, tossing them halfway through.
3. Sprinkle with parmesan cheese and roast five more minutes. Serve immediately
