Garlic Mushroom Quinoa
/A delicious combination of comfort food and health food, this nourishing dish is packed full of protein and is bursting with mushrooms, garlic and thyme. A quick and easy recipe that's sure to become a favourite!
Ingredients
- 1 cup quinoa, uncooked
- 1 tbsp EVOO
- 1 pound mushrooms, thinly sliced
- 5 cloves garlic, mince
- ½ tsp dried thyme
- Kosher salt and freshly ground black pepper, to taste
- 2 tbsp grated parmesan, optional (dairy or plant-based)
Directions
Cook quinoa according to package instructions; set aside.Heat oil in a large skillet over medium high heat. Add mushrooms, garlic and thyme. Cook stirring occasionally, until tender, about 3-4 min; season with salt and pepper, to taste. Stir in quinoa until well combined. Serve immediately, garnished with parmesan, if desired.
