Cold Cucumber Soup
/Hot summer days call for cold soups! Enhanced with lots of fresh herbs this refreshing no-cook soup brings together the cooling powers or cucumber and greek yogurt, and makes a wonderful side dish for summertime meals.
Ingredients
2 large cucumbers, peeled, halved and seeded
1½ c plain Greek yogurt
¼ c olive oil
1 lemon, zested and juiced
1 clove garlic, finely chopped
1 Tbsp finely chopped fresh dill
¼ c loosely packed flat-leaf parsley
½ tsp salt
¼ c chopped purple onion
½ c chopped tomatoes
Directions
In a blender, puree cucumbers, yogurt, lemon juice and zest, olive oil, garlic, dill, parsley, and salt until smooth. Pour into serving bowl and top with tomatoes and onion. Serve immediately.
