Coconut Risotto

Ready in 25 minutes, this take on risotto makes a quick and easy, delicately flavoured side dish full of the awesome healthy fats, vitamins and minerals of coconut milk.

Ingredients

1 1/2 cups light coconut milk
1 cup arborio rice
3/4 cup water
1/4 tsp salt
3 tbsp finely chopped cilantro

Directions

Stir coconut milk with rice, water and salt in a medium saucepan. Bring to boil then reduce heat too low. Simmer covered until tender (~20 min). Stir in cilantro and enjoy.
