Quick and Easy Egg Bites

Quick and Easy Egg Bites (makes 6)


Start your day with these yummy energy-packed, gluten-free, paleo and keto friendly bites. 

Ingredients

5 eggs
1/2 cup of shredded gruyere or swiss cheese
1/4  cup full-fat cottage chees
1/4 tsp kosher salt Freshly ground black pepper

Directions

1. Set oven to 300F and place a baking dish filled with 1 inch of water on the bottom rack.

2. Add eggs, cheese, cottage cheese, salt, and pepper to a blender and blend on high for 20 seconds until light and frothy.

3. Fill non-stick or oil sprayed muffin tins almost to the top with egg mixture. Bake in oven for 30 min, or until centers are just set. Remove from oven and let cool for 5 minutes. Use a spatula or fork to carefully remove them from the muffin tin. Enjoy!

Store egg bites in fridge for up to 3 days. Reheat in microwave or warm oven.
