/Avocado Cauliflower Flatbreads
Enjoy these deliciously quick flatbreads any day (or night) of the week—they offer lots of fibre, healthy fats and awesome flavour.
Ingredients
½ head cauliflower, cut into small florets
1 tbsp EVOO
Salt
1 (14-ounce) can of chickpeas, roasted
2 ripe avocados
2 tbsp lemon juice
4 flatbreads or pitas, toasted
2 tbsp roasted salted pumpkin seeds
Hot sauce (optional)
Directions
On a large rimmed baking sheet, toss cauliflower with olive oil and ¼ tsp salt; roast at 425◦F for 25 min. Mash avocados with lemon juice and a pinch of salt; spread all over flatbreads. Top with roasted cauliflower, chickpeas and pepitas. Drizzle with hot sauce.
