Ingredients:

For the topping:

  • ¾ cup all-purpose flour (can use oat, almond or any gluten-free flour)

  • 1 cup old fashioned GF rolled oats

  • ⅓ cup brown sugar or coconut sugar

  • ½ teaspoon cinnamon

  • ¼ teaspoon salt

  • ⅓ cup cold butter, cut into cubes (can use vegan butter or coconut oil)

For the filling:

  • 6 - 7 apples, peeled, cored and sliced

  • ¼ cup pure maple syrup (or ⅛ cup brown sugar/coconut sugar)

  • 1 teaspoon cinnamon

Directions:

Preheat oven to 350F and lightly grease an 8 x 8” deep baking dish

Make topping: Add flour, oats, cinnamon, sugar and salt to a large bowl and mix. Add pieces of butter (or coconut oil) and use your hands to combine until crumbly. Set aside.

In a separate bowl combine apples, maple syrup or sugar, and cinnamon. Toss to coat. Pour apple mixture into baking pan and sprinkle topping evenly over.

Bake for 45 - 55 minutes or until topping is golden brown and apple filling is bubbling.

Serve warm with your favourite vanilla ice cream. Vegan coconut ice cream works great too!
