Ingredients:
For the Cauliflower Steaks:
1 large cauliflower
2 tablespoons olive oil
1 teaspoon smoked paprika
1 teaspoon garlic powder
Salt and pepper to taste
For the Chimichurri:
1 cup fresh parsley leaves, finely chopped
1/2 cup fresh cilantro leaves, finely chopped
1/4 cup fresh oregano leaves, finely chopped (or 1 tablespoon dried oregano)
3 cloves garlic, minced
1/2 cup olive oil
2 tablespoons red wine vinegar
1 tablespoon lemon juice
Salt and pepper to taste
Red pepper flakes (optional, to taste)
Directions:
Prepare the Cauliflower Steaks:
Preheat your grill to medium-high heat.
Remove the leaves and trim the stem of the cauliflower, keeping the core intact.
Slice the cauliflower into 3/4 to 1-inch thick steaks. You should get about 2-3 steaks from one cauliflower, depending on its size.
In a small bowl, mix the olive oil, smoked paprika, garlic powder, salt, and pepper.
Brush both sides of the cauliflower steaks with the seasoned olive oil mixture.
Grill the Cauliflower Steaks:
Place the cauliflower steaks on the preheated grill.
Grill for 5-7 minutes on each side, or until they are tender and have nice grill marks. Be gentle when flipping to keep the steaks intact.
Prepare the Chimichurri:
In a medium bowl, combine the chopped parsley, cilantro, oregano, minced garlic, olive oil, red wine vinegar, lemon juice, salt, pepper, and red pepper flakes if using.
Mix well until all the ingredients are combined. Adjust seasoning to taste.

Transfer the grilled cauliflower steaks to a serving platter.
