This refreshing and hydrating summertime salad is truly hard to stop eating! Fresh lime juice and mint are the ideal partners to bring together the flavours of cucumber and watermelon. You can omit the feta cheese if you like and it's still a delight. Serve alongside a little protein and you're all set for a quick and easy summer meal!
Ingredients:
4 cups watermelon, cubed
2 cups cucumber, sliced
1/2 cup feta cheese, crumbled
1/4 cup fresh mint leaves, chopped
2 tablespoons olive oil
1 tablespoon lime juice
Salt and pepper, to taste
Directions:
In a large bowl or serving dish, combine the watermelon, cucumber, feta cheese and mint leaves.
Whisk together the olive oil, lime juice, salt, and pepper, and drizzle the dressing over the watermelon mixture.
Gently toss everything together until well combined.
Serve immediately, or chill in the refrigerator for 15-30 minutes to allow the flavours to meld.
