Heart and Soul Warming Soup Stock

Infused with revitalizing ginger, turmeric, garlic and cayenne, this “get back on track” vegan soup stock is a perfect way to bring in the New Year. Just add your favourite veggies, pulses and/or legumes to turn this beautiful broth into a meal!

Ingredients

1 - 2 tbsp EVOO
1 onion, diced
1 tbsp fresh ginger, grated
4 - 5  garlic cloves, grated
2 - 3 tsp fresh turmeric, finely grated (or 1-2 tsp powder)
¼ tsp mustard seed (optional)
1 tsp each cumin and coriander
1 tsp salt
4 c each water and veggie stock
¼ tsp cayenne
1 - 2 tsp apple cider vinegar, to taste

Directions

In a large heavy bottom pot on med heat, sauté onion in oil for 5 min. Add garlic, ginger and turmeric and sauté for 2-3 min.  Add remaining spices and sauté 2 min.  Add stock, water, and salt.  Bring to simmer, add vinegar.  Adjust spices to taste.  Now you have a delicious low cal, antioxidant-rich stock.  Add lentils, beans, and veggies and enjoy the benefits of something that’s feel-good and good-for-you.
