Creamy Cauliflower Mash

This totally delicious Creamy Cauliflower Mash will help you stick to your low-carb goals while letting you enjoy an indulgent and celebratory Thanksgiving weekend! It’s a fun and yummy switch-up of a traditional potato mash even if you aren’t doing low carb, and is worth keeping in mind throughout the year.

Ingredients

1 medium Cauliflower
3 ounces Butter (or vegan substitute)
1 teaspoon Salt
1/2 teaspoon Pepper
Green onion or Parsley (optional for garnish)

Directions

1.Bring a large pot of water to boil.

2. Cut the cauliflower into evenly sized florets and add to the boiling water. Cook for 5-8 minutes, or until the cauliflower is tender.

3. Drain the cauliflower, return it to the warm pot and add the butter, salt and pepper.

4. Using a stick blender, blend the cauliflower until there are no lumps. Allow the mash to sit and rest for 3 minutes and then blend a second time.
