Summer Sweet Cucumber Salad

This delightful salad has a bit of sweet and a little bit of spice too! It’s a really wonderful side to pair with just about anything grilled.

Ingredients

Salad

2 small English cucumbers, thinly sliced
2 medium carrots, thinly sliced
1 large sweet red pepper, julienned
1/2 medium red onion, thinly sliced
2 green onions, sliced
1/2 serrano or jalapeno pepper, seeded and thinly sliced, optional (use gloves!)

Dressing

⅓ cup sugar
⅓ cup rice vinegar
⅓ cup water
1 tsp each salt, garlic powder and pepper
1 tsp sesame oil
1 tsp reduced-sodium soy sauce
1 small garlic clove, minced
½ tsp minced fresh ginger root
¼ tsp cayenne pepper, optional

Directions

In a large bowl, combine all prepared veggies. In a small bowl, mix dressing ingredients, stirring to dissolve sugar. Pour over vegetables; toss to combine. Refrigerate, covered, 30 minutes or overnight (if allowing to set overnight, omit water. Serve with a slotted spoon. If desired top with minced fresh cilantro, chopped peanuts and additional sliced green onion.
