Zucchini Fritters with Yogurt Dip
/This is a such a delicious way to use up any zucchini you may have left in or from your garden, and it's totally worth buying a couple of zucchini to make. Warm, savoury and delicious, serving them with the yogurt dip really brings all the fresh flavours here to the next level!
Fritter Ingredients
2 cups grated organic zucchini (liquid pressed out)
1 cup grated sweet potato
1/3 cup chopped onion
2 large organic eggs
1 teaspoon salt
3 cloves garlic, minced
2 tbsp fresh parsley
2 tbsp fresh mint
1/3 cup cornmeal
1 tbsp cornstarch
1/3 cup olive oil
Yogurt Dip Ingredients
1/2 cup Plain greek yogurt
1 tbsp chopped chives
1 tbsp chopped mint
2 tbsp fresh lemon juice
1 tsp lemon zest
1 tbsp olive oil
1 tsp honey
Salt and pepper to taste
Instructions
1) Combine the following in a large mixing bowl: pressed, grated zucchini; grated potato, 1/3 cup onion.
2) In a smaller mixing bowl, whisk egg together with salt, garlic, parsley and mint.
3) Combine zucchini mixture with egg mixture and stir in cornmeal and cornstarch.
4) Heat olive oil in a non stick pan over medium heat. Once hot, add 1/4 cup of mixture and use fork to flatten into fritter. Cook about 3 minutes on each side or until golden brown.
5) To make dip - combine all ingredients and whisk
6) Serve immediately with yogurt dip and enjoy!
