Creamy Kale Salad

SERVES 4

1 bunch Organic Black Kale, stemmed and coarsely chopped
1 small Organic Red Beet, peeled and grated
1 Organic Gala Apple, cored and cut into thin wedges
1/2 cup Toasted Organic Almonds, chopped
1 ripe Organic Avocado, halved, seed removed
2 tbsp Organic White Wine Vinegar
2 tsp Organic Dijon mustard
3 tbsp Organic Walnut Oil or Extra-Virgin Olive Oil
Salt and Freshly ground pepper

Combine avocado, vinegar, mustard, and oil in blender or food processor. Pulse until smooth. Season with salt and pepper. Combine kale, beet, apple, and almonds in a large bowl. Toss with avocado dressing. Add more salt or pepper to taste. Enjoy immediately.
